Sometimes, building something new starts with coming home.

For the people behind Kawali Specialty Cuisines, coming home meant bringing years of experience, memories, and a love for food, coffee, and hospitality back to Pampanga.

After spending more than a decade in Singapore, the founders returned to the Philippines and built a restaurant in San Fernando, Pampanga inspired by the flavors and experiences that shaped their journey.

But coming home wasn't actually the plan.

When they decided to leave Singapore, the couple had plans to move to Australia, with an employer already sponsoring their relocation. After several visa rejections, they eventually found themselves with one option: returning to the Philippines.

"We actually had plans of moving to Australia," they shared. "But our visas kept getting rejected, and eventually, we were left with one option, to come home to the Philippines."

What first felt like an unexpected turn became the beginning of something they had always wanted to do.

From Singapore to San Fernando, Pampanga

Opening a restaurant wasn't necessarily part of the original plan either.

With Australia no longer feeling like the right path and neither wanting to return to Singapore, the couple decided to take the unexpected change as a sign to pursue a lifelong dream: opening their own business.

Their years in Singapore had given them plenty of inspiration. They had experienced its vibrant food scene and developed an appreciation for the dishes they had grown accustomed to eating.

When they returned home, they found themselves missing those flavors.

"We found it almost impossible to find the kind of Singaporean dishes we had grown so used to," they shared. "So we thought, why not just do it ourselves?"

And that was how Kawali started.

Today, Kawali brings together Asian comfort food, handmade baos, fried rice, noodles, and specialty coffee, giving diners in San Fernando a taste of the flavors that became part of the founders' lives in Singapore.

A Menu Built Around Comfort

The story behind Kawali's menu starts with a simple dish: pork chop fried rice. It was something the couple loved eating almost every day at a small place just below their HDB block in Singapore. After long and tiring days at work, it became their go-to meal.

"It was comforting, familiar, and somehow always made us feel better," they shared.

That feeling became an important part of what they wanted Kawali to be.

The menu is now built around three main categories: fried rice, noodles, and baos, each bringing its own flavors and character. For the founders, choosing just one dish to recommend isn't easy, but they're especially proud of the dishes prepared in their well-seasoned wok.

The secret is wok hei, the distinct smoky and savory flavor that comes from cooking with a hot wok. It's a quality they believe makes their dishes unique and difficult to replicate elsewhere.

The menu isn't simply a collection of dishes inspired by Singapore. It's a reflection of the memories and experiences that shaped the people behind the restaurant.

"We want people to feel a sense of comfort, the kind that comes from a well-prepared, satisfying meal."
